В статье рассмотрены принципы работы всех сенсорных систем человека и указаны факторы, влияющие на их функционирование. Приведены основные требования международных, межгосударственных и государственных стандартов к отобранным испытателям и экспертам-испытателям органолептического анализа, освещены отдельные аспекты подготовки испытателей в Республике Беларусь.</p></abstract><trans-abstract xml:lang="en"><p>Development and improvement of methodology and practice of the sensory analysis in our country is necessary for improvement of quality and competitiveness of food products. In the article the principles of work of all sensory systems of the person are considered and the factors influencing their functioning are specified.
